Cheese biryani is a modern reinterpretation of the ancient Indian biryani, adapting the bold spices and layering of ancient biryani and combining them with the decadent excess of cheese. Classic biryani has meat in it, and cheese biryani substitutes it with grated cheese, cheese bits, or even paneer in a veg version. The result is one that is instantly familiar but entirely new.

Major Grains and Dairy

  • Basmati Rice: Long-grain basmati rice is needed for its light fluff and aromatic aroma. The rice is pre-soaked so that it cooks evenly.

  • Cheese: Shredded cheese, cheese cubes, or cheese block can be used. Mozzarella melts very well, forming a gooey texture.

  • Paneer (Optional): Paneer cubes can be utilized for a paneer cheese biryani, providing protein and taste.

Vegetables and Aromatics

  • Onions: Crispy onions provide crunch and sweetness, and thinly sliced onions provide depth to the masala.

  • Tomatoes: Chopped or blended tomatoes are the foundation of the masala, providing tanginess.

  • Yogurt (Curd): Gives creaminess and moisture level in the masala.

Step-by-Step Cheese Biryani Recipe

Here are the instructions to make a rich cheese biryani that is all the rage. Each step has been designed to get the best out of taste and texture.

Rice Preparation

  1. Soak Basmati Rice: Rinse 2 cups of basmati rice until the water runs clear. Soak in water for 30 minutes so that the rice remains fluffy.

  2. Boil Rice: Boil a lot of water. Add rice, bay leaf, and salt once the rice is soaked. Boil for 80% (rice grains should not be mushy, but soft). Drain and set aside.

Tip: Add a few drops of lemon juice to the boiling water so that rice grains don’t stick together.

Prepping the Cheese and Vegetables

  1. Prepare Cheese: Grate 1 cup of mozzarella cheese or cut cheese blocks into bite-sized pieces. Cut paneer into bite-sized pieces if using.

  2. Fry Onions: Heat 2 tbsp ghee or oil in a pan. Fry 2 thinly sliced onions until crispy and golden brown. Set aside for layering.

  3. Chop Vegetables: Chop 1 capsicum into cubes, grate 1 small carrot (optional), and chop 2 tomatoes (or use 1 cup tomato puree). 2 green chillies to be finely chopped.

Cooking the Masala

  1. Sauté Spices: Heat ghee or 3 tablespoons of oil in a big pan. Add whole spices (1 mace, 2 cardamoms, 3 cloves, 1 cinnamon stick, and 1 bay leaf) with 1 teaspoon cumin seeds. Sauté until it gives a spicy smell.

  2. Add Aromatics: Add ginger garlic paste 1 tablespoon along with green chillies. Saute for 1 minute.

  3. Cook Vegetables: Add chopped vegetables (capsicum, carrots), chopped tomatoes, and saute until soft.

  4. Add Spices: Add ½ teaspoon turmeric powder, 1 teaspoon red chilli powder, 1 teaspoon coriander powder, ½ teaspoon cumin powder, and 1 tablespoon of biryani masala. Saute until the oil separates.

  5. Add Yogurt: Add ½ cup yogurt and mix well. Simmer for 2-3 minutes until the masala thickens. Add salt to taste.

Layering the Cheese Biryani

  1. Prepare the Pan: A Dutch oven or heavy, heavy-bottom pan can be used. Grease the bottom with ghee.

  2. Layer Rice and Masala: Spread a layer of prepared basmati rice at the base. Spread a layer of masala, sprinkling grated cheese, fried onions, coriander leaves, mint leaves, and some cashews.

  3. Repeat Layers: Repeat a layer of rice, masala, cheese, and toppings. Repeat again and again until ingredients are depleted, leaving rice on top.
